    Most of us know that one of the leading contributors to heart disease is high cholesterol. And, weve all been told to limit our saturated fats to help lower our cholesterol levels. But, what you may not realize is that simply drinking green tea you can help reduce the effects of the cholesterol in your diet, and reduce your risk of heart disease, too. Cholesterol comes in two forms. HDL cholesterol or high density lipoproteins is what we refer to as good cholesterol. HDL cholesterol carries bad cholesterol away from the heart and deposits it to the liver where it passes out of the body. HDL cholesterol protects you from hear disease, so we want this cholesterol level to be high. You can raise your level of HDL cholesterol by using good fats like olive oil and nuts in your diet in place of saturated fats. LDL cholesterol

    low density lipoproteins is bad cholesterol. This cholesterol circulates in the blood. When too much of it is present, it oxidizes, becoming hard. Then it sticks to the walls of your arteries. This is what is known as arterial plaque. This is very dangerous because it constricts these arteries, restricting blood flow. Narrow arteries are more susceptible to blockage, particularly from a blood clot. One particularly interesting study was conducted to evaluate the benefits of drinking green tea to cardiovascular health, particularly related to the reduction of LDL cholesterol. This study evaluated 12 healthy men, who ranged between 28-42 years of age. Each participant drank 600 ml of green tea every day for four weeks. Their blood was taken before the test began, two weeks into the test and again at the end of the four weeks. Several measures of the blood were taken. Overall LDL levels were measured, along with the oxidation activity of this LDL cholesterol. The anti-oxidant activity and the levels of cell adhesion were also measured. The study showed that drinking green tea did not lower overall cholesterol levels in the blood, nor did it show an increased level of anti-oxidant activity. However, it did show a significant decrease in the amount of LDL cholesterol that was becoming oxidized, and a lower level of LDL adhesion to the bodys cells. This represents important information for those trying to prevent heart disease. While drinking green tea doesnt rid your body of the bad cholesterol, it does seem to prevent it from oxidizing and turning into plaque. Without the oxidation process, the cholesterol doesnt harden and stick to the arterial

    walls, causing constriction. We know that the danger of LDL cholesterol is in the fact that it hardens into plaque and narrows the walls of our arteries. If we can prevent this process, we eliminate the danger that LDL cholesterol brings to our health. While were not certain why green tea has this effect, we suspect that its related to green teas high level of anti-oxidants. Anti-oxidants are known to fight free radicals that are created in the body as a by-product of our digestive process. Free radicals also go through an oxidation process as part of doing damage to the body, so we know that anti-oxidants have the power to interrupt the oxidation process of free radicals. Therefore, it stands to reason that the anti-oxidants in green tea are the reason that it is able to interrupt the oxidation process of LDL cholesterol, too. Its certain that we need to do more research on this subject. Its also certain that research of this sort on hum ans will take years to complete in such a way that we have irrefutable conclusions. Most of the research that has been performed to date has been on laboratory animals, with only a few tests on humans. And, conclusive human studies will take years to perform, if we wish to have an understanding of the long term effects. In the meantime, however, drinking green tea has no downside. Green tea is refreshing and healthy. And, while it does contain caffeine, the caffeine content is significantly lower than that of coffee and black tea, so it is usually well tolerated, even by those who are caffeine sensitive. There are many ways to enjoy green tea. Brew if for drinking hot, or chill for a refreshing cold drink. There

    are green tea supplements you can take, and there are even recipes containing green tea so that you can put it in your favorite foods. As time goes on, its highly likely that we will discover more and more benefits of drinking green tea. The research that has already been conducted has shown that green tea may have many potential benefits, including preventing many forms of cancer, Alzheimers disease and Parkinsons disease in addition to heart disease. However, while were waiting for those results, theres no harm in getting a head start on your health!

    White tea is fast becoming a very popular drink in the Western world. Once consumed only in China and Japan, and only for the most elegant of occasions, white tea is now being consumed as an everyday beverage for people all over the world. White tea is special because of its very light and delicate flavor and fragrance. Its far milder and less astringent than black teas, and lacks the grassy flavor of many green teas. In addition, white tea has all the health benefits of green tea, and possibly even more benefits. Like black and green tea, white tea comes from the camellia sinensis plant. But, white teas are harvested much earlier than other teas, before the leaves are fully open and while they retain fine white hair on the buds. White tea is also processed differently than black and green teas, in that it receives the virtually

    no processing. The leaves are simply dried and steamed. The steaming prevents the leaves from oxidizing, protecting the delicate flavor and helping the tea leaves retain their natural anti-oxidants. These potent anti-oxidants have been shown to slow down the aging process and prevent serious illnesses like cancer and heart disease. The catechins in green and white tea have been shown to help speed up the metabolism and oxidize fat, promoting weight loss. In addition, white tea in particular seems to improve the immune system, helping your body fight off bacteria and viruses. However, even the finest white tea is affordable, costing less per cup than most sodas and gourmet coffees. Choose your tea from a reputable tea purveyor to ensure that youre getting only the best tea. White tea is less compact than other loose teas, so you will need more per cup than with many other loose teas. Next, its important to use fresh cold water anytime you brew tea. Put the water in a clean tea kettle and bring it to a boil on the stove. Put hot tap water in your teapot to warm it up while the water is heating. Once the water boils, remove the tap water from your pot and add your tea leaves. Use about 2 teaspoons per cup for white Persian melon tea. Let the water sit for a minute or two before pouring it over the tea leaves. This assures you that the water has coole d to between 170-185 F, the perfect temperature for brewing white teas. Steep your white Persian melon tea for about 5-8 minutes, depending on your tastes. The tea will be pale with a golden color. Expect a sweet and fruity flavor with just a hint of smokiness. To make iced tea, simply brew several servings of tea at once and allow to cool. Since white tea is so delicate in flavor,

    its not wise to make white tea and then pour it over ice while hot. Doing so may dilute the flavor of the tea to a point that it tastes too weak. Instead, allow the pitcher of tea to cool before serving. This keeps the original flavor of the tea by not allowing the ice to dilute it too much. You can also use your white Persian melon tea for cooking. In fact, one of the best ways to poach fish is in white tea rather than water. Make about 2 cups of white Persian melon tea. Add other seasonings, such as lemon, salt and pepper as desired to the tea. Sear the fish fillets slightly in a pan on top of the stove. When seared, add the seasoned white tea and allow the fish to cook until done. Try salmon, sea bass or tilapia with this recipe for a mild and delicious fish dish. Experiment and youll likely find many other ways to use white Persian melon tea, both for drinking and for cooking. Youll soon find out why this delicate white tea is one of the most high ly prized in all the world.
